In the history of torrone, no one can forget the day Bianca Maria Visconti married Francesco Sforza. Visconti was the sole heir to the prestigious Duchy of Milan, while Sforza was a mercenary soldier ready to conquer, together with Bianca, his kingdom. It was in Cremona, where the two were wed, that “the people of Cremona wished to offer a precious gift to the newlyweds, and from their ingenuity was born one of the most exquisite delights ever to grace the palate”: torrone. Not only delicious, but also symbolic. Its shape was a replica of the “Torrazzo” of the cathedral — solid, strong, and proud like the duchy, but also pious and sweet, like the soul of Bianca Maria. “It seemed made expressly to reflect the very essence of the bride and groom: firm to the bite, yet it took little for it to melt in the mouth — just like our Condottiero with his fair Lady.”
